Australian Finger Limes    

A small thorny tree to four meters in height native to the hinterland areas from Byron Bay to Mt Tamborine in Southern Queensland with a finger-shaped fruit up to 120 cms long and a weight of up to 30 grams. There is a variety of colors of both skin and pulp from light green through to deep maroon, and the caviar-like sacs of fruit pop a citrus explosion on the tongue – delicious on natural oysters, fish, and in jam. Superb in gin and tonic. The fruit is unique in the citrus family in that it may be frozen for later use without loss of appearance or flavour.

Fresh fruit is available January to April, and frozen fruit for the remainder of the year.
